Cajun Salmon Burger

Ingredients
2 salmon fillets
1 tbsp Morton & Bassett Cajun Seasoning
1 tsp Morton & Bassett Smoked Peppercorn Grinder
1 dill pickle, chopped
¼ cup fresh dill, roughly chopped
½ cup mayonnaise
Juice of 1 lemon
½ green cabbage, shredded
½ red onion, thinly sliced
½ cucumber, thinly sliced
2 burger buns
1 tbsp white vinegar
olive oil
salt, to taste
Directions
Preheat oven to 375 degrees.
In a bowl, combine shredded cabbage, red onion, cucumber, white vinegar, and a sprinkle of M&B Smoked Peppercorn Grinder. Toss well and set aside.
In a small bowl2 burgers mix mayonnaise, chopped pickle, lemon juice, dill, and a pinch of M&B Smoked Peppercorn Grinder until combined. Regrigerate until ready to use.
Pat salmon fillets dry and season with salt, M&B Cajun Seasoning, and remaining M&B Smoked Peppercorn Grinder. Drizzle lightly with olive oil and rub to coat. Bake for 12-15 minutes, or until the salmon reaches an internal temperature of 145 degrees.
Assemble the burgers. Spread tartar sauce on both sides of each bun. Add salmon fillet and top with a generous portion of slaw. Serve immediately.
