Ingredients
2 ½ cups all-jpurpose flour
2/3 cup powdered sugar, plus more for dusting
½ tsp salt
12 tbsp unalted butter, melted

1 tbsp Morton & Bassett Almond Extract
3 cups granulated sugar
Zest of 3 lemons (about 3 tbsp)
½ cup all-purpose flour
8 large eggs, room temperature
1 cup fresh lemon juice

Directions
Preheat oven to 350 degrees. Line a 9” x 13” baking dish with parchment paper.
Make the crust: in a large bowl, whisk together 2 ½ cups flour, powdered sugar, and salt. Pour in the melted butter and M&B Almond Extract, mixing until fully combined.
Press the dough evenly into the prepared pan to form a flat layer. Bake for 18-20 minutes, or until lightly golden.
Prepare the filling: While the crust bakes, add the granulated sugar and lemon zest to a food processor. Pulse until fragrant and combined. Transfer the lemon sugar to a large bowl. Whisk in the remaining ½ cup flour.
Add the eggs and lemon juice. Mix thoroughly until smooth and fully combined.
Pour the filling over the warm crust. Return to the oven and bake for 25-30 minutes, rotating the pan halfway through, until the center is set.
Remove from the oven and cool at room temperature for 1 hour. Then refrigerate for at least 2 hours before slicing.
Dust with powdered sugar and cut into bars.
