Za’atar Butter Bean Salad

Ingredients
1 can of butter beans, drained and rinsed
1 can garbanzo beans, drained and rinsed
1 can artichoke hearts, quartered
1 cup green olives
1 clove garlic, finely minced
½ red onion, thinly sliced
¼ cup parsley, finely chopped
Zest and juice of 1 lemon
¼ cup olive oil

1 tsp Morton & Bassett Sumac
-
1 tsp Morton & Bassett Za'atar

1 tsp Morton & Bassett Ground Cumin
1 tsp salt
Directions
In a large bowl, combine the beans, artichokes, olives, garlic, onion, and parsley.
Add lemon zest and juice, olive oil, M&B Sumac, M&B Za’atar, M&B Cumin, and salt.
Toss until everything is evenly coated.
Top with extra lemon zest and fresh parsley, if desired, and serve.
