Summer Quinoa Salad

Ingredients
- 2 cups quinoa, uncooked
- 1 large cucumber, diced
- 1 can chickpeas
- 1 cup red onion, diced
- ¼ cup chopped flat leaf parsley
- ¼ cup chopped fresh mint
- ½ an avocado
- Juice of half a lemon
- 
                1 tablespoon Morton & Bassett Lemon Pepper Blend
                
- ¼ cup pistachios
- Pinch of salt
 
                  Directions
- Cook the quinoa according to instructions, and let cool once cooked.
- In a large mixing bowl, mix the cooled quinoa with the cucumber, chickpeas, red onion, parsley, mint, and avocado. Add in the lemon juice, lemon pepper, and toss to combine. 
- Top with salt and pistachios.
