Skillet Huevos Rancheros

Ingredients
- 4 eggs
- 1 poblano pepper, sliced
- 1 avocado sliced
- 2 radishes, thinly sliced
- ½ cup chopped cilantro
- 1 jalapeno pepper, sliced
- ½ yellow onion, sliced
- ¼ cup cotija cheese

1 tbsp Morton & Bassett Mexican Spice
Blend
- 1 large can of whole peeled tomatoes
- 1 can pinto beans (drained)
- 1 tbsp cooking oil

1 tbsp Morton & Bassett Cayenne Pepper

1 tbsp Morton & Bassett Ground Ancho
Chile Powder
- Salt to taste

Directions
- Heat cooking oil in a cast iron skillet, then add in sliced onion and poblano and jalapeno peppers and sauté over medium-high heat until soft.
- Add in can of whole tomatoes and break up with a spatula.
- Sprinkle in salt, M&B Cayenne Pepper, M&B Ground Ancho Chile Powder, and M&B Mexican Spice Blend and let simmer for 5 minutes.
- Add in pinto beans, cover and let cook for 15 minutes.
- Crack eggs in spread 3 inches apart, cover again and let cook for another 10 minutes.
- Remove from heat and top with sliced avocado, sliced radishes, chopped cilantro, and cotija cheese. Serve with tortillas or eat by itself!
