Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- ¼ cup, plus 2 tablespoons olive oil
- ½ lemon, juiced
- 4 garlic cloves
- 1 tablespoon brown sugar

1 tablespoon Morton & Bassett Peri Peri
- ½ teaspoon salt
- 1 Fresno chili, sliced
- 1 small bunch flat leaf parsley, chopped
Directions
In a food processor, add ¼ cup olive oil, lemon juice, garlic cloves, brown sugar, and M&B Peri Peri. Blend until fully incorporated, then pour over chicken thighs. Let marinate for one hour in the fridge.
In a large pan, heat remaining olive oil over medium heat. Add marinated chicken and cook for about 15 minutes, flipping halfway, until chicken has reached an internal temperature of 165° F.
Pull the chicken and reserve sauce from the pan. Drizzle reserved marinade over the chicken and garnish with chilis and parsley. Serve with a side of roasted potatoes.
