Mediterranean Corn Salad
- 1 cucumber, diced
- 2 stalks celery, chopped
- Kernels from 2 ears of corn, raw and sliced off the cob
- 5 radishes, thinly sliced
- ⅓ cup fresh parsley, rough chopped
- ½ cup feta cheese
- ½ cup greek yogurt
- 1 tablespoon red wine vinegar
1 teaspoon Morton & Bassett Oregano
½ teaspoon Morton & Bassett Dill Weed
½ teaspoon Morton & Bassett Coarse Ground Black Pepper
For the Derssing
Mix the dressing ingredients until well combined..
In a large bowl, add the corn, cucumbers, celery, radishes, and parsley.
Drizzle the dressing on top and finish with feta cheese.
