Lemon Peel Infused French 75
Make the lemon peel infused simple syrup: Combine sugar, water and lemon peel in a small pot and bring to a boil. Once boiling turn off the heat, cover and steep for 15 minutes. Strain through a fine mesh sieve and cool.
Add the gin and lemon simple syrup in a shaker with ice and shake until well chilled.
Pour into a chilled coupe glass or champagne flute. Top with sparkling wine and serve with a lemon peel. Cheers!
