Ingredients
- 3 chicken thighs, bone in skin on

2 tbsp Morton & Bassett Jerk Seasoning
- ½ cup fresh Italian parsley
- 2 cups cole slaw
- 1 cup cubed pineapple
- ½ cup olive oil
- 1 tsp salt

Directions
- In a small bowl, mix ¼ cup olive oil with M&B Jerk Seasoning and salt, creating a paste.
- Rub chicken thighs with the paste, coating well.
- In a cast-iron pan, heat without oil, sear pineapple chunks on each side for 4 minutes.
- Remove from heat and add ¼ cup olive oil.
- Place chicken in the cast iron and cook until the internal temperature reaches 165 degrees (flipping halfway through).
- Place coleslaw on a large serving tray, top with charred pineapple, and plate chicken on top. Garnish with fresh parsley and enjoy!
