Ingredients
12–15 fresh clams
¼ cup dry white wine
4 cloves garlic
Juice of ½ lemon
¼ cup fresh parsley, chopped
½ stick salted butter
-
1 teaspoon Morton & Bassett Red Chili Flakes
-
1 teaspoon Morton & Bassett Rainbow Peppercorn Grinder
Crusty bread, sliced
Parmesan cheese, grated
Directions
Preheat one side of your grill to medium-high heat. Place the clams directly onto the grill grates.
On the other side of the grill, place a heat-safe pan and melt the butter.
Add garlic, white wine, lemon juice, parsley, M&B Red Chili Flakes, and M&B Rainbow Peppercorn Grinder to the pan. Stir and allow the sauce to simmer for 2–3 minutes.
Top the sliced bread with grated Parmesan cheese and place onto the grill until toasted and golden brown.
Once the clams begin to open slightly, transfer them into the pan with the butter sauce. Close the grill lid and allow the clams to steam until fully opened, about 3–5 minutes.
Carefully transfer the clams and sauce onto a serving platter.
Serve immediately with the grilled Parmesan bread for dipping.
