Cajun Shrimp & Grits

Ingredients

2 teaspoons Morton & Bassett Cajun Spice Blend

1 teaspoon Morton & Bassett Smoked Paprika
- 1 1/2 cups grits
- 3/4 teaspoon salt
- 1 cup shredded cheddar cheese
- 3 tablespoons unsalted butter
- 1/3 cup heavy cream
- 1 large green bell pepper, chopped
- 4 medium scallions, chopped
- 3 cloves garlic, chopped
- 5 pieces of bacon, chopped
- 1 can diced tomatoes
- 2 lbs raw peeled and deveined large shrimp
- 1 lemon

Directions
- In a large saucepan, bring 5 cups of water to a boil. Stir in grits and salt. Reduce heat to medium and simmer, until grits are tender. Remove from heat, cover, and let sit for 10 minutes.
- In a large skillet, cook bacon over medium heat until crispy, 8-10 minutes. Remove bacon from the pan, leaving bacon fat in the skillet. Add the green bell pepper, scallions, and garlic to the skillet. Cook for 2 minutes.
- Add the diced tomatoes, M&B Cajun Spice Blend, and M&B Smoked Paprika to the skillet. Stir and simmer for 3 minutes.
- Once the grits have thickened, stir in the shredded cheddar cheese, butter, and heavy cream. Season with additional salt if needed.
- In the large skillet with the tomato mixture, add the shrimp and cook until opaque, about 3-4 minutes. Stir in the cooked bacon.
- Serve the grits topped with the shrimp mixture and garnish with remaining scallions and a lemon wedge.
