Beef Kefta with Hummus

Ingredients
- 1 pound ground beef
- ¼ cup red onion, minced
- 1 bunch cilantro, chopped
- 1 cup fresh mint, chopped
- 1 cup fresh basil, chopped
- 1 cup fresh dill, chopped
- 3 garlic cloves, minced
- 1 lemon, zested
- ½ lemon, juiced

1 teaspoon Morton & Bassett Ground Cumin

½ teaspoon Morton & Bassett Red Chili Flakes
- 3 teaspoons salt
- 10 skewers
- 2 tablespoons olive oil
- 1 can chickpeas, drained
- 3 tablespoons tahini
- ¼ cup water
- 1 cucumber, diced
- 3 large tomatoes, diced
- 1 tablespoon red wine vinegar
Directions
In a large mixing bowl, add ground beef, red onion, 2 minced garlic cloves, cilantro, dill, and half of the mint and basil. Top with ½ teaspoon lemon zest, M&B Ground Coriander, M&B Ground Cumin, M&B Red Chili Flakes, and 1 teaspoon salt. Thoroughly mix together.
Using about ¼ cup of beef mixture, form meat around each skewer. Heat a pan over medium high heat on the stove with olive oil and add each skewer (cooking in batches). Rotate skewers every few minutes for even cooking.
To make the hummus, combine chickpeas, tahini, lemon juice, remaining lemon zest, 1 minced garlic clove, and 1 teaspoon salt into a food processor. Process until smooth, adding water 1 tablespoon at a time to reach desired consistency.
Prepare the tomato and cucumber topping. Mix tomatoes, cucumber, red onion, remaining basil and mint, red wine vinegar, and remaining teaspoon of salt. Gently mix and set aside.
To serve, layer kefta skewers on top of hummus, and top with the tomato and cucumber salad.
