Sparkling Blood Orange Cardamom Muffins

Ingredients
- 3/4 cup granulated sugar
- 2 eggs
- 1/2 cup olive oil
- 1/2 cup whole milk
- 1 large blood orange

1 teaspoon Morton & Bassett Ground Cardamom

2 teaspoon Morton & Bassett Cardamom Pods
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 tablespoons turbinado sugar

Directions
- Preheat your oven to 350° F. Generously butter a muffin tin or line it with paper muffin cups.
- In a large mixing bowl, combine milk, about a ¼ cup of freshly squeezed blood orange juice, eggs and olive oil. Whisk until well blended and smooth.
- In a separate bowl, whisk together flour, baking powder, baking soda, granulated sugar, and M&B Ground Cardamom. Create a well in the center of the dry ingredients.
- Pour the wet ingredients into the well of the dry ingredients. Gently fold the mixture together with a spatula or wooden spoon until fully combined.
- Prepare your sugar topping by peeling your M&B Cardamom pods and grinding the seeds with a mortar and pestle until fine. Combine the freshly ground cardamom with turbinado sugar and orange zest.
- Divide the muffin batter evenly among the muffin cups, filling each about ¾ of the way full. Sprinkle a generous amount of the sparkling cardamom sugar mixture over the tops of each muffin for a sweet, crunchy finish.
- Place the muffin tin in the preheated oven and bake for 20-22 minutes, or until the muffins have risen and the edges are lightly golden brown.
