In a small saucepan, add water, sugar, M&B Mint, and M&B Lemon Peel. Over medium-low heat, carefully stir mixture to create a lemon mint simple syrup. When all sugar is dissolved, let cool and strain with a fine mesh strainer or coffee filter.
Add crushed ice into two small glasses. Squeeze lemon juice directly into the glasses, followed by 1 ounce of bourbon per glass. Pour ½ ounce of lemon mint simple syrup into each glass, stir, and garnish with fresh mint.
