Couscous Pea Salad

Ingredients
- 1 can peas or 1 cup fresh-shucked peas
- 2 cups pearl couscous, uncooked
- 1 medium red onion, thinly sliced
- 3 cups arugula
- ¼ cup olive oil
- 1 cup chopped parsley

½ tbsp Morton & Basset Za’atar

½ tbsp Morton & Bassett Ground Cumin
- ½ lemon (juiced)
- 1 tsp salt

½ tbsp Morton & Bassett Garlic Powder

½ tsp Morton & Bassett Fine Ground Black
Pepper

Directions
- Cook couscous per package instructions, then let it cool once cooked.
- While the couscous cooks, start on your dressing by combining the olive oil, M&B Za’atar, M&B Ground Cumin, M&B Garlic Powder, lemon juice, salt, and M&B Fine Ground Black Pepper.
- Set dressing aside and assemble the salad.
- In a large salad bowl, combine arugula, parsley, red onion, peas and cooked couscous.
- Dress generously and toss to combine.
