Watermelon Mint Mojitos
In a sauce pan, heat sugar and water until sugar dissolves. Turn off the heat and add in the mint. Let steep for 15 minutes, then let cool in the fridge.
Cut watermelon into large chunks and blend in blender until liquid.
Strain juice through a fine mesh strainer twice.
Strain mint simple syrup through a fine mesh strainer twice.
In a shaker, add ice, 4 parts watermelon juice, 1 part mint simple syrup, 2 parts rum, and a squeeze of fresh lime juice. Shake and pour over ice, garnish with lime, and enjoy!
